SOUP ▪1 1/2lbs/700g boneless skinless chicken thighs ▪Salt ▪40g or 3Tbsp Coconut oil ▪2 14oz/414mL cans coconut milk ▪1kg/4c chicken stock (Full tutorial in this video: 🤍 ▪High smoke point frying oil (canola, vegetable, coconut) ▪Chinese fresh egg noodles (sub regular fresh egg noodles, ramen noodles, or rice noodles) ▪30g or 1 1/2Tbsp fish sauce ▪25g or 1/8c brown sugar ▪20-25g or 4-5tsp Sambal chili sauce Salt chicken on both sides. And set aside for a few minutes while you make the curry paste. Preheat large dutch oven or pot over med high then add coconut oil. When melted, add curry paste (recipe below) and pinch of salt. Stir and cook for 60-90 sec until aromatic and beginning to glaze pot. Stir in coconut milk and chicken stock to combine and bring to a simmer. Once simmering, carefully lay in chicken thighs. Once simmering again, reduce heat to low to cook for 15-20min or until thighs are fully cooked and tender. Once tender and breaking apart easily, remove chicken from broth. Add fish sauce, brown sugar, and sambal to soup and stir to combine. Cut chicken into bite sized pieces and return them to the broth. Taste for seasoning and adjust if needed with fish sauce and/or chili sauce. For the noodles in the soup, bring water to a boil, salt liberally, and boil until al dente. If using fresh noodles, this should take 2-3 minutes depending on the noodle. GARNISH ▪Red onion - raw, thinly sliced, and rinsed under cold water ▪Cilantro ▪Lime wedge ▪Crunchy fried noodles (see below) ▪Pickled mustard greens (If you can’t find, look for a mellow sauerkraut or sour deli pickle. Essentially you want something tangy and crunchy) For the fried noodle topping, add about 1”/2.5cm of oil to a medium sauce pot and heat over medium high. Once oil reaches 350F/175C, drop in a small bundle of the fresh egg noodles to fry for about 15-20 seconds per side or until puffed up and taking on some color. Once done, transfer to towel to drain excess oil. If subbing in packaged ramen, no need to fry. These can be crunched on top of the soup straight from the package. 🎧MUSIC: EPIDEMIC SOUND. 🎥 Thai Street Food - Surat Thani: 🤍 👍 100% Real Durian Chips - Order Here: 🤍 🍽️ Khrua Luang Then ร้าน ครัวหลวงเทน: 🤍 Khrua Luang Then (ร้าน ครัวหลวงเทน) - During my trip to Southern Thailand, and specifically the southern Thai province of Phang Nga, one of the restaurants I was most looking forward to eating was Khrua Luang Then (ร้าน ครัวหลวงเทน) - it was a place I could feel I was going to love before going - just from the look of powerful spices in the dishes, and the laid-back environment. Turned out to be one of the best Thai food meals I’ve had in a long time, one of my new favorite restaurants in all of Thailand. We arrived in the morning just as they opened, and already Chef was extremely friendly and welcoming. We ordered a bunch of dishes - and they have some unique southern Thai food dishes that you won’t find elsewhere - so I was extremely excited. Here are the main dishes we ordered: Sour curry sea catfish แกงส้มปลาดุกทะเล Beef dry curry คั่วกลิ้นเนื้อ Fried fish turmeric ปลาทอดขมิ้น Black stingray curry ผัดเผ็ดปลากระเบนดำ Red ant omelet ไข่เจียวมดแดง Octopus pineapple โวยวายสับปะรด Sea shells หอยชักตีน Stir fried morning glory ผัดผักบุ้ง Total price - 1,800 THB ($55.46) Before eating, I had a chance to watch Chef as he masterfully cooked all the dishes. His insane skills and use of huge amounts of spice blew my taste buds before even starting to eat. He makes all his own curry pastes, and sources all his ingredients locally. The food was absolutely insane, bold, spicy, tingly, and a sensation for the tongue. Mind blowing flavor, and strong to the max curries. I loved every bite, and the entire experience. Chicken Khao Soi RECIPE COURTESY OF JET TILA Level: Easy Total: 1 hr Active: 30 min Yield: 4 servings Ingredients 4 cups (960 milliliters) coconut milk 2 tablespoons (30 milliliters) yellow curry paste 2 tablespoons (30 milliliters) massaman curry paste 2 makrut Thai lime leaves, fine chiffonade 2 pounds cooked chicken leg quarters, from Thai Chicken Stock, recipe follows 1 tablespoon (15 milliliters) fish sauce 2 teaspoons sugar 1 tablespoon (15 milliliters) tamarind paste 1 cup Thai Chicken Stock, recipe follows To Serve: 8 ounces (240 grams) fresh flat egg noodles, boiled for about 30 seconds, rinsed, and drained 1 handful fresh flat egg noodles, fried crispy, for garnish 1/2 cup (90 grams) Chinese pickled mustard greens, drained and sliced thin 1/2 cup (90 grams) shallots, peeled and cut in small dice 2 scallions, bias sliced Cilantro leaves, for garnish Thai Chicken Stock: 2 pounds chicken leg quarters (4 pieces) 8 cups water 3/4 cup thinly sliced galangal 2 stalks lemongrass, lower thick portion only, pounded 2 to 4 makrut lime leaves 1 whole garlic bulb, halved 1 large shallot, sliced 2 to 4 Thai chiles, pounded Directions In a medium saucepan, heat 3 tablespoons of the rich coconut milk (the white, opaque part that has risen to the top) to medium heat and stir in the curry pastes. Stir-fry this mixture for about 1 minute, until the paste starts to deepen in color and is thick and fragrant. Stir in the remaining coconut milk and lime leaves. Add the cooked chicken pieces and stir to coat the pieces in the paste, about 1 minute. Increase the heat to high to bring to a boil. Allow this to boil for about 5 minutes, then reduce the heat to a strong simmer, about 10 minutes. Once the volume of liquid has evaporated by about 1/4 or the liquid coats the back of a wooden spoon, proceed. Next, add the fish sauce, sugar and tamarind. Finish with the chicken stock. Taste and adjust as necessary. To serve: Separate the noodles into 4 bowls and place a chicken leg in each. Ladle about 6 to 8 ounces of the rich broth over each noodle bowl. Garnish with crispy noodles, mustard greens, shallots, scallions and cilantro on top. Thai Chicken Stock: Place the chicken leg quarters in a stock pot and cover with 8 cups cold water. Bring to a simmer. Add the galangal, lemongrass, lime leaves, garlic, shallot and chiles to the stock and allow to simmer. Skim foam and fat often, continue to simmer for about 1 hour 30 minutes. Reserve the cooked chicken legs. Skim off any additional fat and strain the stock through cheesecloth. Get ready for some incredibly delicious Northern Thai food! Khao soi (ข้าวซอย sometimes khao soy), or curry noodles, is one of the most popular Thai dishes in northern Thailand. It has a very unique history and though details are not completely known, most say that it originally was brought from Yunnan, China through Myanmar, adapting along the way, and finally reaching Chiang Mai, where it’s become of the iconic foods. In Thailand though, is where the dish accumulated coconut milk, which is found in most version now. What is khao soi (ข้าวซอย)? Khao soi (ข้าวซอย) typically includes yellow egg noodles of some form, which are combined with a meat - usually beef or chicken (and I typically order beef as much as I can) - topped in coconut milk curry sauce, and finally sprinkled with coconut cream, and finally topped with crispy fried noodles. There’s a massive debate over who serves the best khao soi in Chiang Mai, and I don’t think it will ever be resolved because everyone has a different taste. But along with the help of my friend Tom (from Chaseki tea shop in Chiang Mai: 🤍 and Joel, we set off to eat 5 bowls of khao soi in a row to share with you what we think is the best khao soi in Chiang Mai, Thailand. Here are the restaurants we ate at: 1. Khao Soi Islam (ร้านข้าวซอยอิสลาม 🤍 - This is a longtime restaurant serving khao soi in what is known to be quite a traditional version. It’s a Halal restaurant, and their beef is amazing, but the curry is quite mild in spice. Price - 60 THB ($1.82) for big bowl 2. Khao Soi Khun Yai (ร้านข้าวซอยคุณยาย 🤍 - Next we went to Khao Soi Khun Yai (ร้านข้าวซอยคุณยาย), what was many years ago one of my favorite bowls, but this time? Price - 40 THB ($1.22) per bowl 3. Khao Soi Loong Prakid Kad Gom (ข้าวซอย ลุงประกิจกาดก้อม 🤍 - Many locals from Chiang Mai recommended I check out Khao Soi Loong Prakid Kad Gom (ข้าวซอย ลุงประกิจกาดก้อม), and it was amazing. The size, and the taste were spectacular. Price - 40 THB ($1.22) per bowl 4. Khao Soi Mae Manee (ข้าวซอยแม่มณี 🤍 - About a 10 minute drive from the center of Chiang Mai we found ourselves in a neighborhood for our fourth bowl of khao soi at Khao Soi Mae Manee (ข้าวซอยแม่มณี). The Aunty was so friendly and I watched her as she assembled our bowls, amazing. Price - 40 THB ($1.22) per bowl 5. Khao Sok National Park is een prachtig natuurgebied in het zuiden van Thailand. Het is één va de absolute hoogtepunten tijdens een rondreis door Thailand en makkelijk te bereiken vanuit Bangkok, Phuket of Krabi. Wij komen van het eiland Koh Samui en reizen per bus en boot naar het grote meer van Khao Sok tussen het machtige karstgebergte. Hier maken we de mooiste vaartocht van onze wereldreis tussen de apen, vogels en een hele groep olifanten. Voor wildlife zit je dus goed in Khao Sok. Samen met mijn gezin slaap ik in hutjes, drijvend op het water. We maken een jungle trekking en we tuben op de rivier, terwijl de apen over onze hoofden slingeren! Wat een avontuur. We bezoeken Thailand tijdens een wereldreis van een jaar en misschien blijven we zelfs voor onbepaalde tijd reizen. Op nieuwjaarsdag begonnen we op Lanzarote en Fuerteventura, de Canarische Eilanden. Daarna zag je ons in Oman, Kaapverdië, Martinique, Saint Lucia, Tobago, Grenada, de Bahama's, de Verenigde Staten, Mexico, Ecuador, de Galapagos-eilanden en Brazilië. CHIANG MAI, THAILAND - Looking for the best khao soi in Chiang Mai? Well, I think this bowl of khao soi noodles recipe might be the best in the whole of Thailand, not just Chiang Mai. That is right, the best khao soi in Thailand. They are worth travelling for, trust me. You do not want to miss this bowl of noodles in Chiang Mai. Khao soi is a coconut curry noodle soup which comes from Northern Thailand, Myanmar, and Laos. It consists of noodles in a thick, rich coconut broth, and usually chicken or beef. It was voted the best soup dish in the world. This place is in the Doi Pui Hmong Village which is just beyond the famous Wat Phra That Doi Suthep. If you carry on up the hill and into the Hmong village, you will find it. There is also a stunning viewpoint above the village called the Doi Pui Viewpoint. Khao soi is a fragrant and flavorful noodle dish that originates from the northern region of Thailand, specifically Chiang Mai. This dish is a unique combination of influences from Thai, Chinese, and Burmese cuisine, resulting in a delicious and complex flavor profile. At its core, khao soi is a coconut curry soup that is typically made with chicken or beef as the main protein. The soup is flavored with a variety of spices, including turmeric, cumin, and coriander, and is often garnished with fresh herbs and crunchy noodles. What really sets khao soi apart, however, is the addition of crispy egg noodles on top of the soup. These noodles provide a satisfying crunch that contrasts perfectly with the rich and creamy soup. In addition to the crispy noodles, khao soi is often served with pickled mustard greens, lime wedges, and sliced shallots, which add even more depth of flavour to the dish. Although khao soi is now a popular dish throughout Thailand and beyond, its origins can be traced back to the mid-19th century when Chinese immigrants began settling in Chiang Mai. I've teamed up with fellow YouTuber and Chiang Mai native 🤍dannbangkok to see if Bangkok's most famous Khao Soi at Ongtong can stand up to my pick in the area at Hann Khao Soi Lovers. A lot of people have told me that Ongtong Khao Soi has the best Northern Thai food in Bangkok but that's a bold statement! I know it's my wife's favourite though. We both agreed that the khao soi at Hann Khao Soi lovers is the best but I'm sure you will be happy with either. Get over and follow 🤍dannbangkok now! Khao soi (ข้าวซอย) is one of the most popular Thai dishes to eat in northern Thailand, especially in Chiang Mai and Chiang Rai. More details about Khao Soi Khun Yai (ข้าวซอยคุณยาย) here: 🤍 Khao soi (ข้าวซอย) is a Thai noodle dish that has origins in Burma. The basic part of the dish begins with a bowl of yellow egg noodles that are blanched and then combined with the all important curry gravy sauce which is made from coconut milk with a blend of dry spices. It's often nutty in flavor, slightly sweet, and flavorful from the dry spices. There are many different version of khao soi (ข้าวซอย), and some tend to be more spicy and flavorful, while other are more sweet and nutty - I prefer the former. So when I was searching for the best khao soi (ข้าวซอย) in Chiang Mai, I came across Khao Soi Khun Yai (ข้าวซอยคุณยาย) in a Travelfish article (🤍 and decided to give it a try. Khao Soi Khun Yai (ข้าวซอยคุณยาย) in Thai means Grandmother's khao soi, and I don't think I've ever had a bad experience dining on food from grandmother, so I was pretty excited to give it a try. As soon as I walked into the open air restaurant, I knew it was going to be my style. The restaurant was sort of street food style, but housed on the peaceful compound of the temple, away from the road, so it a nice and relaxing shaded place - a perfect environment for a perfect bowl of noodles. At Khao Soi Khun Yai (ข้าวซอยคุณยาย) they serve both khao soi (ข้าวซอย) and also kuay teow tom yam (ก๋วยเตี๋ยวต้มยำเส้นเล็ก), the popular version of Thai noodles in a sweet and sour tom yum broth. My wife actually order the tom yum noodles, and they were also wonderful, but I was more interested in tasting their khao soi. They normally have two different version, chicken and beef. So rather than having to make a hard decision, I decided to go for both - which I would highly recommend you do too - no need to make a decision. As soon as my bowls of khao soi (ข้าวซอย) were ready, they were delivered to our table, and I immediately loved the color of the broth, which was nice and dark red in color. Some bowl of khao soi, the broth is light and doesn't look all that flavorful. This was dark and red and you could just see all the spices and glorious flavors within it. I first tasted the broth, and then I went ahead and dumped in the rest of the condiments, mostly the roasted chili flakes to add some extra heat to it. The khao soi (ข้าวซอย) was incredibly good. The broth, or curry sauce was creamy and tasty, yet it wasn't too rich or sweet like it can sometimes be. It had a nice flavor blend of spices, and it was just balanced out perfection. The extra hit of roasted chili flakes added another wonderful dimension of flavor to my bowl of khao soi noodles. Along with any bowl of khao soi, you'll also be served some pickled mustard greens and slices of red onions on the side. I havne't come close to trying every bowl of khao soi (ข้าวซอย) available in Chiang Mai, but out of the bowls of the dish that I've tried so far, I can say quite confidently Khao Soi Khun Yai (ข้าวซอยคุณยาย), serves the best khao soi I've ever had in Chiang Mai. If you love this Thai dish and are looking for an authentic, spiced to perfection version, you must include this wonderful restaurant on your itinerary. Full written recipe for Veg Khao swe Prep time: 15-20 minutes Cooking time: 15-20 minutes Serves: 7-8 people For fresh homemade coconut milk (800 ml approx.) Ingredients: • Fresh coconut 2 cups • Water 2 cups + 3/4th - 1 cup Method: • Roughly chop the fresh coconut and transfer in a grinding jar, along with water, grind as fine as possible. • Use a sieve and a muslin cloth, transfer the coconut paste in the muslin cloth, squeeze well to extract the coconut milk. • Further reuse the pulp by putting back in the grinding jar, and add additional water, repeat the same process to extract maximum coconut milk. • Your fresh homemade coconut milk is ready, this will yield you approximately 800 ml of coconut milk. Keep aside to be used for making khao swe. For soup Ingredients: • Onion 2 medium size • Garlic 6-7 cloves • Ginger 1 inch • Green chillies 1-2 nos. • Coriander stems 1 tbsp • Oil 1 tbsp • Powdered spices: 1. Haldi (Turmeric) powder 2 tsp 2. Lal mirch (Red chilli) powder 2 tsp 3. Dhaniya (Coriander) powder 1 tsp 4. Jeera (cumin) powder 1 tsp • Veggies: 1. Farsi (french beans) ½ cup 2. Gajar (Carrots) ½ cup 3. Baby corn ½ cup • Vegetable stock / hot water 750 ml • Gud (jaggery) 1 tbsp • Salt to taste • Besan (gram flour) 1 tbsp • coconut milk 800 ml Method: • In a grinding jar add, onions, garlic, ginger, green chillies & coriander stems, add little water and grind into a fine paste. • Set wok on medium high heat, add oil & add the onion grounded paste, stir and cook for 2-3 minutes. • Lower the flame & add the powdered spices, add little water & cook the spices until it releases its oil. • Add the veggies & stir well, further add vegetable stock or hot water, gud (jagger) & salt to taste, stir & bring to a boil, cook for 5-6 minutes on medium flame. • Now, lower the flame and in a separate bowl add besan and a few tablespoons of coconut, mix well to make a lump free besan slurry. Further add this slurry to the coconut milk and stir well, make sure there are no lumps. • Now, add the slurry mixed coconut milk in the wok and stir well, now you can increase the flame to medium heat & let the soup simmer for 5-6 minutes. Stir in regular intervals. • Taste for the salt & adjust the seasoning accordingly. Finish by adding some lemon juice. • Khao swe / curry is ready and serve hot with other components.
